Vegan Black Bean Burger Recipe

To make vegan burgers, you’ll need softened some black turtle beans. Black beans can either be softened by soaking them overnight or if you have a pressure cooker, you can use this to soften them in less time.

Ingredients

  • 400g of softened organic black beans.  Ensure all water is drained and that the beans are patted dry.
  • 1 Tablespoon extra virgin olive oil
  • 3/4 cup finely chopped bell pepper.
  • 1 cup finely chopped white onion about 1/2 a large onion
  • 3 garlic cloves minced (about 1 Tablespoon)
  • 1 and 1/2 teaspoons ground cumin
  • 1 teaspoon chilli powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 1/2 cup bread crumbs.
  • 1/3 of a cup of mashed sweet potatoes or 2 large eggs if you’re not vegan.)
  • 2 Tablespoons ketchup, or BBQ sauce
  • pinch salt + pepper

Directions

  1. Preheat oven to 325°F (163°C). Spread beans evenly onto a lined baking sheet and bake for 15 minutes until slightly dried out.
  2. Meanwhile, sauté olive oil, chopped pepper, onion, and garlic over medium heat until peppers and onions are soft, about 5-6 minutes. Gently pat some of the moisture out. Place in a large bowl or in a food processor with the remaining ingredients (cumin, chilli powder, garlic powder, smoked paprika, bread crumbs, mashed sweet potatoes, ketchup, salt, and pepper). Stir or pulse everything together, then add the black beans. Mash with a fork or pulse the mixture, leaving some larger chunks of beans.
  3. Form into round patties ready for baking.

To Bake

  1. Place the burger patties on some parchment paper lined baking sheet and bake at 190°C for no more than 10 to 11 minutes on each side.
  2. Serve with your favourite toppings either eat the black bean burger with a bread roll or on their own as I prefer.
