Pudding rice can be any short grain rice that usually has its outer husk removed. Any starchy short grain rice is suitable for making into an authentic rice pudding. It is the starch content which provides the creamy, soft texture necessary for a good pudding!

Directions

Rice pudding recipes vary greatly. Typically, half a cup of rice per person is poured into a large baking dish and covered with equal parts of whole milk and evaporated milk. Add sugar to taste together with nutmeg, cinnamon and vanilla. Bake at 150°C for around 2 hours, removing and stirring twice during the first hour.
